[BUG] Activity description says that a role updated the due date of an unassigned task instead of the user who actually performed the action

Current issue: Activity description on My Submissions says that a role updated the due date of an unassigned task instead of the user who actually performed the action

Steps to reproduce:

1. Associate Single Approver with Blogs Entry
2. Create 1 blog entry
3. Go to CP > Metrics > Single Approver Metrics > Click on the Pending Items number
4. Update the due date of the blog entry
5. Go to CP > Workflow > Submissions 
6. Click on the blog entry > Activities

Actual result: The description says that the role updated the due date of the task, but the user Test Test did it.

Expected result: The user who performed the action should be displayed
